Three veggie-heavy Paleo-friendly meals in under 15-minutes

I’ve been working crazy hours lately. This requires high-quality nourishment, without a lot of fuss. Perhaps you’ve been there? Here are the three meals I ate yesterday that felt awesome in my body, and required 15 minutes of prep-time each:

Breakfast: Sunnyside up eggs and kale (stems removed, cooked with garlic, ghee, salt, and a little broth or water, covered until soft).

Lunch: Cube a sweet potato, steam until soft (10 mins.) Meanwhile, throw a TB of ghee, or coconut oil in a pan and sautee onions, garlic, pepper, zucchini, mushrooms, (or whatever you’ve got in the fridge) and ½-1 tsp. each of cumin, coriander, and chili powder, and sea salt, then add an entire bunch of spinach in the last 2 minutes of cooking. Rinse some canned black beans. Combine everything in a bowl, and top with sliced avocado.

Dinner: Crockpot pastured chicken heaped with similar spices as lunch plus a can of diced tomatoes, with lunch’s leftover veggies, or wrapped in lettuce, with salsa and goat cheese. Prep at breakfast, let cook for 5 hours in the crockpot.
